Ingredients
- 1.5 cups farro
- 1 pint cherry tomatoes, halved
- 1 English cucumber, diced
- 1/2 red onion, thinly sliced
- 1 cup kalamata olives, halved
- 1 cup crumbled feta cheese
- 1/4 cup fresh mint, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 3 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste

Cook farro according to package directions. Drain and let cool.

In a large bowl, combine cooled farro with tomatoes, cucumber, red onion, and olives.

Whisk together olive oil, lemon juice, oregano, salt, and pepper.

Pour dressing over the salad and toss to combine.
