Lemon Herb Roasted Chicken

Ingredients

  • 1 whole chicken (about 4 lbs)
  • 2 lemons, 1 juiced and 1 sliced
  • 4 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme leaves
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lb baby potatoes, halved

Instructions

    Preheat oven to 425°F (220°C).

    Pat the chicken dry and place in a roasting pan.

    Mix lemon juice, garlic, rosemary, thyme, olive oil, salt, and pepper in a small bowl.

    Rub the herb mixture all over the chicken, including under the skin.

    Stuff the cavity with lemon slices and scatter potatoes around the chicken.

    Roast for 1 hour 15 minutes, or until the internal temperature reaches 165°F.

    Let rest for 10 minutes before carving. Serve with the roasted potatoes.
