Ginger Sesame Stir-Fry

Ingredients
- 1 lb chicken breast or firm tofu, sliced thin
- 2 tbsp sesame oil
- 1 tbsp vegetable oil
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 cup snap peas
- 2 carrots, julienned
- 3 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp honey
- 2 tsp fresh ginger, grated
- 3 cloves garlic, minced
- Sesame seeds and sliced scallions for garnish
Instructions

Mix soy sauce, rice vinegar, honey, ginger, and garlic in a small bowl.

Heat vegetable oil in a wok or large skillet over high heat.

Cook chicken (or tofu) until browned, about 4 minutes. Remove and set aside.

Add sesame oil and all vegetables. Stir-fry for 3-4 minutes until tender-crisp.

Return the protein to the wok and pour in the sauce.

Toss everything together for 1 minute until coated and heated through.

Serve over rice, topped with sesame seeds and scallions.
