Ingredients

  • 1.5 cups all-purpose flour
  • 3 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/4 cups buttermilk
  • 1 large egg
  • 3 tbsp melted butter
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries
  • Maple syrup and butter for serving

Instructions

    Whisk flour, sugar, baking powder, baking soda, and salt in a large bowl.

    In a separate bowl, whisk buttermilk, egg, melted butter, and vanilla.

    Pour wet ingredients into dry and stir until just combined (lumps are okay).

    Gently fold in blueberries.

    Heat a griddle or non-stick pan over medium heat. Lightly butter the surface.

    Pour 1/4 cup batter per pancake. Cook until bubbles form on the surface, then flip.

    Cook another 1-2 minutes until golden. Serve with maple syrup and butter.
